Alizán believes in a modern approach to winemaking. We strive to make the highest quality red wine through a winning combination of our team’s expertise, modern equipment and technology. We closely monitor our vineyards to ensure complete control. Our vines are planted “en vaso,” with an average age of 50 years and average yields of 1,000 kilogram per hectare. We prefer natural methods and avoid chemical fertilizers to obtain a naturally grown grape that respects the environment. Harvest is manual in 20-kilogram boxes. Fermentation takes place in stainless steel tanks of multiple sizes – 5,000, 10,000, 15,000 and 25,000-liters – with double refrigeration chambers to control the fermentation temperature and maximize the potential of our grapes. Following a long maceration the wines age in 225-liter American and French oak Bordeaux barrels; all of our barrels are new, and renewed every three years. The wine ages for 6, 12 or 18 months depending on the style. We conduct daily samplings to ensure the best aging time and store our finished wines under controlled light and temperature.
